One year ago I broke the news:  The most Minnesotan Thanksgiving side dish of all time was not, in fact, invented in Minnesota! As hard as it is to believe, it was created on the EAST COAST! And the story of its invention and inventor is pretty great!

b) Famous 1940's Minneapolis Chef Greg Bealot

c) Dorcas Reilly

Not your grandma, though she may have a tattered and torn recipe in her recipe file.  Not Minneapolis Chef Greg Bealot because I made him up. That leaves us with Dorcas. Dorcas Reilly, to be exact, and she had to fight her boss to get the recipe made public.

The dish was invented by an employee and her team at Campbell's Soup to increase sales of cream of mushroom soup!

Dorcas Reilly led the team that created the recipe while working as a staff member in the home economics department.The inspiration for the dish was "to create a quick and easy recipe around two things most Americans always had on hand in the 1950s: green beans and Campbell’s Cream of Mushroom Soup."

When it first arrived on cans of soup, it was "Green Bean Bake". Glad they changed that up. Her Green Bean Casserole is so popular that a) 40% of Cream of Mushroom Soup purchases go to GBC, and ii) in 2002 Dorcas Reilly was inducted into the national Inventors Hall of Fame! And I say she deserves it. Good stuff!

Interesting Dorcas Reilly Fact: she and her team also invented tuna noodle casserole and Sloppy Joe’s.
