Minnesota's Food Truck Festival is hitting the road this year. The family-friendly event has expanded to include 50 food trucks and will stop in three Minnesota cities this summer.

Eddie's Rey de la Birria has announced an opening date in Rochester, Mn, They say they'll "redefine the Mexican dining experience by offering a unique fusion of traditional Birria flavors, a stylish liquor bar, and a tempting selection of fresh Mexican bakery products."

A hibachi food truck is stationed in Cedar Rapids and the food looks GREAT!

This Saturday, the St. Paul Food Truck Festival will take over Lot D at the Union Depot. The event is free and full of 50+ food trucks, craft beer, and live music.
